Lazy Gnocchi

A couple of weeks ago on Lydia's Italy, they made these great Gnocchi dishes and of course I developed a taste for some. Here's my lazy girl version of Gnocchi and Prosciutto

Gnocchi and Prosciutto

½ bag frozen gnocchi
3 slices prosciutto
1 clove garlic
1 tbsp butter
1 tsp olive oil
Ground sage
fresh cracked pepper

Cook gnocchi to package directions, in pot of boiling and salted water.

Melt butter over low or medium heat in non-stick skillet, add olive oil.
Mince garlic and add to melted butter and olive oil.
Slice prosciutto into ribbons or gently tear into small pieces, add to skillet.
Remove cooked gnocchi from boiling water, add directly to skillet.
Saute gnocchi, proscitto and garlic together for no more than 5 minutes.
Season with dashes of sage, thyme, salt and pepper.

Top with a dash of fresh parmesan, if desired.

Serve with a hot hearty green, like Kale or with a salad.

Sounds deeelish. I am, as I type, cooking up some tomato sauce to rescue some overcooked turkey burgers. I crumbled the burgers and they're going in the sauce. And they'll be served with salad and the Spring Ragout I told you about from 101 Cookbooks!
