Pasta with Roasted Red Peppers & Artichokes

A few weekends a go I was scrounging through the cabinets, because I didn't want to move from the couch and wanted take-out, but didn't have enough cash on hand for Chinese and a tip; anyway I managed to make a decent (and delicious) meal somehow. This is now one of my favorite quick & easy meals.

Pasta with Roasted Red Peppers & Artichokes

*note: this was a dish made completely on the fly so there are no measurements*

Olive Oil
Roasted Red Peppers (jarred or from the Olive Bar @ your grocery story)- sliced into thin strips
Artichoke hearts - cut into 1/4's
Minced garlic
Italian seasoning
Grated Parmesan (optional)
Whole Wheat Pasta

Cook pasta and drain.

Warm olive oil in a large skillet over medium heat. Add the peppers and garlic saute for about a minute. Add artichokes and capers season with Italian seasoning and pepper; add pasta and toss. Reduce heat to low and let everything simmer for 2 - 3 minutes, add cheese and serve.

If you like dressing this up a bit serve it with a nice glass of champagne.
