Super simple weeknight dinner

I love, love love simple meals and pasta is, generally, my go to for a simple meal.

If you're looking for something sans tomato sauce try this one night.

Pasta with Garlic & Capers in a Lemon Butter Sauce


(for 1)

1/4 pound pasta (a short tubular one)
4 small or 2 large cloves garlic thinly sliced
2 to 3 tsp. capers
1/2 to 1 tbsp. butter
1/2 to 1 tbsp. olive oil
1 to 1 1/2 tbsp. lemon juice
salt & pepper to taste

Cook pasta according to package directions.
Drain.
In the same pot that you cooked the pasta, melt butter and add olive oil. When butter and oil are warmed add garlic and capers, allow to cook for about 2 minutes and add lemon juice. Toss pasta in and season with salt and pepper and allow the sauce to cook down a bit.
Plate and top with grated parmesan.

See I told you it was simple.
